Do you own a slow cooker? I love my slow cooker; you can throw in all the ingredients in the morning leave simmering away and then have a delicious meal ready to eat in the evening. If you are only cooking for one or two it is great for batch cooking, where you can freeze any extra portions.
This Slow Cooker Beef and Chestnut Stew is prefect for this time of year. Adding in chestnuts adds a Christmas flavour and slow cooking beef makes it really tender. You can add in different flavours or vegetables; with this recipe I have cooked potatoes separately but if you have room in your slow cooker you could add them in.
I love this way of fuss-free cooking particularly when you can be so busy in the build up to Christmas, and in winter there is nothing nicer than a warming hearty stew.

Slow Cooker Beef and Chestnut Stew – serves 4
400g diced beef
¼ cup of all-purpose flour
salt and pepper
2 cloves of chopped garlic
1 teaspoon paprika
1 teaspoon Worcestershire sauce
1 chopped onion
2 stalks of celery chopped
1 carrot chopped
100g chestnut mushrooms
180g vacuum packed chestnuts
500ml beef stock
Slow Cooker Beef and Chestnut Stew method:
- Place the meat in the slow cooker
- In a small bowl mix flour with salt and pepper and sprinkle over the meat stir to coat the meat.
- Stir in the rest of the ingredients and stock
- Cover and cook on a low setting for 8-10 hours or high for 4-6 hours
- Serve with potatoes or rice and green vegetables
