Preheat oven to 160°.
- Place all ingredients, except for coconut oil, in a bowl and whisk to combine until there are no lumps or clumps and the mixture is light and bubbly.
- Use the coconut oil to lightly grease 2 or four, small ovenproof bowls. Spoon mixture equally into each bowl.
- Place in oven and cook for 15 minutes or until a skewer inserted into the centre comes out clean.
- Serve immediately, with fresh berries and a dollop of natural Greek yoghurt or creme Fraiche.
